I'd like to recommend you get the Scott Kelby manual for your software - it will teach you so much!  He writes in a simple every day fashion - easy to understand, you don't have to read 1/2 the book to learn 1 step, and I gotta say I love his books and keep em handy all the time!  Nice pic of a bird I've not seen YET!

On line videos (how to for SH adj) levels – this is using CS4 but it works for all PS stuff-

Part 2 SH video is where I would start – I very seldom do RGB adjustments-
